Ingredients:

  • 1 12-count package Hawaiian rolls
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 1 tablespoon cinnamon

For the Frosting:

  • 1/4 cup butter, softened
  • 4 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 1/2 to 1 tablespoon milk

Instructions:

  1. Preheat the oven to 350 degrees and grease a baking dish with nonstick cooking spray.
  2. Stir together the melted butter, brown sugar, and cinnamon until well combined.
  3. Remove the Hawaiian rolls from the packaging and slice the entire loaf in half lengthwise, creating top and bottom buns.
  4. Place the bottom buns in the prepared baking dish.
  5. Brush half the butter mixture over the bottom section of the rolls.
  6. Place the top half of the rolls in the pan and brush with the remaining butter mixture.
  7. Bake in the preheated oven for 20 minutes, until the rolls are golden brown.
  8. While the rolls are baking, prepare the frosting by beating together the butter, cream cheese, and vanilla until smooth.
  9. Add the powdered sugar and 1/2 tablespoon of milk to the bowl and beat to combine. Add more milk, if needed, until the icing is your desired consistency.
  10. When the rolls are finished baking, remove them from the oven and immediately top with the cream cheese icing. Serve warm.

🥓 Bacon Egg Biscuit Pockets Breakfast RV Meals

Makes 5 servings

Prep time: 10 minutes

Cook time: 15 minutes

Ingredients:

  • 1 5-count package biscuit dough (I used Pillsbury Butter Tastin’)
  • 1 tablespoon butter
  • 4 large eggs
  • ¼ cup milk
  • 4 strips bacon, coarsely chopped
  • 3 slices cheese (I used American)
  • Salt and pepper

Instructions:

  1. Preheat the oven to 375 degrees and line a baking sheet with parchment paper.
  2. Whisk together the eggs, milk, salt, and pepper until well combined.
  3. Heat a medium skillet over medium low heat and add the butter.
  4. When the butter is melted, add the eggs and cook until scrambled. 
  5. Remove the pan from heat and allow the eggs to cool slightly.
  6. While the eggs are cooling, open the biscuit package and separate the biscuits.
  7. Use a rolling pin to roll out each biscuit until it’s flat.
  8. Place a small amount of eggs along one side of the flattened biscuit.
  9. Top the eggs with pieces of bacon and ½ slice of cheese.
  10. Fold the other side of the biscuit over the top of the filling and press the seam to seal and flatten.
  11. Roll up the edge of the seam tightly to keep the filling from leaking out.
  12. Use a knife to cut vent holes in the top of each biscuit pocket.
  13. Place the stuffed biscuits on the prepared baking sheet and bake for 12 to 15 minutes, until the biscuits are golden brown.
  14. Allow the pockets to cool slightly before eating.

🥘 Breakfast Casserole Cups

Makes 12 cups

Prep time: 10 minutes

Cook time: 30 minutes

  • 4 cups frozen shredded hashbrowns
  • ½ pound breakfast sausage, cooked
  • 2 cups shredded cheddar cheese

  • 8 flour tortillas
  • 1 cup grated cheddar cheese

  3. Add oil to the pan, fry the sausage for 5 minutes. Drain excess fat.
  4. Add eggs, milk, salt, pepper. Cook by stirring.
  5. Put the beans in the middle of the tortilla, then top with potatoes.
  6. Then the egg mixture and all the remaining ingredients.
  7. Roll up like a burrito. Put in a pan with a seam down, cook in the oven at 180 degrees for about 15 minutes.
