🫘 Black Bean Stuffed Peppers

Serves: 6

Prep time: 15 minutes

Cook time: 25 minutes

Ingredients:

  • 3-4 Green Bell Peppers
  • 1 Tablespoon Oil or Butter
  • 1 Onion, diced
  • 3 Garlic Cloves, minced or sliced
  • Salt and Pepper, to taste
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder, to taste
  • 1 cup Green Salsa
  • 2 cups Cooked Rice
  • 1 1/4 cup Cooked Black Beans
  • 1 cup Shredded cheddar Cheese, optional

Directions:

  1. Preheat oven to 350F.
  2. Clean and cut each bell pepper through the middle (lengthwise or horizontal, doesn’t matter).
  3. Use a paring knife to remove the core from each bell pepper and empty of all membranes and seeds. Set peppers in a casserole dish and bake for 10 minutes.
  4. Meanwhile, place the oil in a large pot over medium heat.
  5. Once hot, add the onion and cook until translucent, about 3 minutes.
  6. Add the garlic and cook for one additional minute.
  7. Stir in the seasonings and cook one minute until fragrant.
  8. Stir in the green salsa, cooked rice and cooked black beans and continue cooking until warmed through, about 5 minutes.
  9. Scoop the rice and bean mixture into the bell pepper halves and top with cheese, if desired.
  10. Cover the bell peppers with tinfoil and bake for 10 minutes.
  11. Remove the tinfoil and continue to bake for 10 more minutes, then remove the tinfoil and continue to bake for 5 minutes.

🥚 Egg Salad Crostini

Makes: 24 crostini

Preparation: 15 minutes

Cooking: 10 minutes

Ingredients:

  • 1 French baguette 13.3 oz
  • 1 tbsp olive oil
  • 6 eggs
  • 1 cup fresh parsley
  • 1 cup fresh dill
  • 1 cup mayo
  • ½ tsp salt
  • ½ tsp paprika
  • 1 tsp black pepper
  • 3 tbsp butter
  • A few basil leaves to garnish

Instructions

  1. Preheat oven to 350F
  2. Cut baguette into ½ inch slices. Place each slice onto a prepared baking sheet and drizzle it with olive oil. Garnish each slice with a pinch of fresh dill.
  3. Bake for 10 minutes. Leave to cool. Spread butter onto each slice when ready.

Instruction for making a salad:

  1. Peel boiled eggs and cut into a small pieces.
  2. Chop parsley and dill, mix it with eggs. Add salt, pepper, paprika and mayo, mix it together.
  3. Transfer salad onto each slice. Garnish with basil and hint of paprika. Enjoy!

🧆 Meatball Sub on a stick

Prep time: 5 minutes

Cook time: 15 minutes

Serves: 3

Ingredients

  • 1 cup Shredded Mozzarella Cheese
  • 1 tube store bought pizza dough
  • 12 wooden skewers
  • 48 frozen meatballs
  • Marinara sauce (for dipping)

Instructions

  1. Take out 1 bag frozen meatballs and allow them to slaw slightly (just enough so that you can thread a skewer through it.
  2. When ready, preheat the air fryer to 375F degrees.
  3. Unroll 1 tube pizza dough and slice into 12 slices.
  4. Poke one end of one of the pieces of breadstick dough with one of the 12 bamboo skewers then add one meatball then thread the dough around the meatball.
  5. Repeat threading with dough and additional meatballs.
  6. Place in air fryer and cook for about 7 minutes.
  7. Flip and air fry for another about another 7 minutes. Meatballs should be cooked through and the pizza dough a nice light, golden brown.
  8. Once finished, sprinkle the meatballs with about 1 cup mozzarella cheese
  9. Turn the air fryer on for another 3-4 minutes or until cheese has melted.
  10. Serve with warm marinara sauce.
