  • 6 slices of cinnamon swirl bread
  • 4 eggs

  6. Place muffins in the air fryer basket and cook at 350Β° for 15 minutes.

Ingredients

  • 2 cup flour scooped and leveled (250g)
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • Β½ tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 tbsp vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs, room temperature*
  • 1/3 cup sourdough discard, room temperature
  • 1/2 cup milk at room temperature (120g)
  • 2 tsp vanilla extract
  • 1 cup blueberries

Streusel

  • 2 tbsp butter, melted
  • 1/3 cup (40g) all-purpose flour
  • 1/2 cup granulated sugar
  • 1/8 tsp salt

Vanilla glaze

  • 1/2 cup powdered sugar
  • 1 tbsp milk or heavy cream

How to Make

  • Spray loaf pan with non stick and set aside
  • Preheat the oven to 350Β°F
  • Whisk the (2 cups) all-purpose flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
  • To a large mixing bowl, add the melted butter, oil, eggs, sugar,  sourdough discard, vanilla extract, and milk.
  • Whisk until well combined.
  • Add the flour mixture to the wet ingredients and fold with a rubber spatula or wooden spoon until almost all are combined.
  • Toss the blueberries in the tablespoon of flour
  • Carefully fold the berries through the batter.
  • Scoop the batter into the prepared pan.
  • Bake the sourdough blueberry loaf can or allow it to rest chilled and covered for up to 16 hours

Make the topping

  1. Add melted butter, all-purpose flour, sugar, and salt to a small bowl.
  2. Use a fork to combine it into a coarse crumb
  3. Crumble the streusel topping into small pieces on top of the batter.
  4. Bake the loaf in the oven for around 60-65 minutes or until golden brown and a skewer inserted into the middle comes out clean.
  5. Let the sourdough blueberry bread sit in the pan for 20 minutes before removing.
  6. Let it cool down to room temperature on a wire rack.
  7. Mix the glaze ingredients once cooled, then drizzle it over the blueberry bread.
