π₯ Air Fryer French Toast Muffins (Yields 6)
Prep time: 10 minutes
Cook time: 15 minutes

Ingredients:
- 6 slices of cinnamon swirl bread
- 4 eggs
- 3/4 cup of milk
- 1/4 cup of heavy cream
- 1 tablespoon of sugar
- 1 tablespoon of vanilla
- 1/3 cup all-purpose flour
- 1/4 cup Brown sugar
- 1 1/4 tsp Cinnamon, ground
- 1/2 stick of butter
- 1/4 tsp kosher sea salt
Instructions:
- Cut the slices of bread into 1β cubes.
- In a large mixing bowl, incorporate the milk, cream, eggs, vanilla, salt, and sugar.
- Gently toss the bread cubes in the egg wash.
- In a separate small bowl, break the butter into pea-size pieces (Using a fork or a pastry blender or your hands) and mix with brown sugar, cinnamon and flour to make the crumble.
- Scoop half a cup of bread cubes into a silicone muffin liner. Top with the crumble.
- Place muffins in the air fryer basket and cook at 350Β° for 15 minutes.
- Let cool, dust with powder sugar, and glaze with maple syrup.

Ingredients:
- 2 Cups Bisquick
- 1/2 cup milk
- 1 Pound ground breakfast Sausage

For the Gravy:
- 1/4 cup butter
- 1/4 cup flour
- 2 cups milk
- Salt and pepper to taste
Instructions:
- Preheat the oven to 350 degrees.
- Stir together the Bisquick, milk, sausage, and cheese until well combined.
- Form the mixture into balls and place the meatballs in a baking sheet lined with parchment paper.
- Bake for 20 to 25 minutes, until cooked through.
- While the meatballs cook, heat the butter in a skillet over medium heat.
- When the butter is melted, add the flour and whisk to combine. Continue whisking until the mixture begins to brown.
- Slowly add the milk to the pan, whisking continuously. Allow the gravy to simmer for 5 to 10 minutes, whisking constantly, until thickened. Season with salt and pepper.

Yield: 1 Loaf

Ingredients
- 2 cup flour scooped and leveled (250g)
- 2 tsp baking powder
- 1/4 tsp baking soda
- Β½ tsp salt
- 1/2 cup unsalted butter, melted
- 1 tbsp vegetable oil
- 1 cup granulated sugar
- 2 large eggs, room temperature*
- 1/3 cup sourdough discard, room temperature
- 1/2 cup milk at room temperature (120g)
- 2 tsp vanilla extract
- 1 cup blueberries
Streusel
- 2 tbsp butter, melted
- 1/3 cup (40g) all-purpose flour
- 1/2 cup granulated sugar
- 1/8 tsp salt
Vanilla glaze
- 1/2 cup powdered sugar
- 1 tbsp milk or heavy cream
How to Make
- Spray loaf pan with non stick and set aside
- Preheat the oven to 350Β°F
- Whisk the (2 cups) all-purpose flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
- To a large mixing bowl, add the melted butter, oil, eggs, sugar, sourdough discard, vanilla extract, and milk.
- Whisk until well combined.
- Add the flour mixture to the wet ingredients and fold with a rubber spatula or wooden spoon until almost all are combined.
- Toss the blueberries in the tablespoon of flour
- Carefully fold the berries through the batter.
- Scoop the batter into the prepared pan.
- Bake the sourdough blueberry loaf can or allow it to rest chilled and covered for up to 16 hours
Make the topping
- Add melted butter, all-purpose flour, sugar, and salt to a small bowl.
- Use a fork to combine it into a coarse crumb
- Crumble the streusel topping into small pieces on top of the batter.
- Bake the loaf in the oven for around 60-65 minutes or until golden brown and a skewer inserted into the middle comes out clean.
- Let the sourdough blueberry bread sit in the pan for 20 minutes before removing.
- Let it cool down to room temperature on a wire rack.
- Mix the glaze ingredients once cooled, then drizzle it over the blueberry bread.

Makes 8 stacks

Ingredients:
- 24 frozen mini pancakes (I used Hungry Jack)
- 1 cup Nutella
- 4 strawberries, cut in half
- Powdered sugar for garnish (optional)
Instructions:
- Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
- Place the frozen pancakes in an even layer on the baking sheet and top with a second piece of parchment paper.
- Bake in the preheated oven for 10 minutes, until softened.
- Allow the pancakes to cool slightly, then spread a layer of Nutella over the top of 8 pancakes.
- Place a pancake on top of the Nutella and add another layer of Nutella.
- Place a third pancake on top and top with a strawberry.
- Push a toothpick into the center of the stack to hold the ingredients together and garnish with powdered sugar before serving.
