Directions:
Get your campfire or grill ready to cook on. If making them in the oven, preheat the oven to 350 degrees Fahrenheit.
In a large cast iron skillet, add the pre-cooked pulled pork, add seasonings, Sofrito, beans, and onions.
Mix and heat over low for 2-3 more minutes.
I used individual containers so that everyone could customize their own.
They chose their own bag of chips and then layered their favorite toppings and cheese. I like to crush the chips and use a fork to eat them.
You can also eat it right out of the bag, walking taco nachos. 🙂
You can pop them in the microwave to melt the cheese. However, if you place the cheese directly on the hot meat, it will melt on its own.
To make nachos in one pan, place a layer of tortilla chips on the bottom of an aluminum pan.
Add pork mixture, layer with cheese, and continue the process one more time.
Cover with foil or cheese melting cover.
Place the tray on the campfire or in the oven for three minutes or until the cheese melts.
Remove from heat, let cool a few minutes and add desired toppings.
Note: Sofrito can be found at most major supermarkets in the international frozen section.
